Ingredients

  • 4 cups chopped vine-ripened tomatoes
  • 2 cups dried black beans, cooked in salted water until tender, cooled (about
  • 2 cups)
  • 1 cup small diced red onions
  • 1 large fresh jalapeno, seed and cut into small dice
  • 1/2 cup loosely packed chopped fresh cilantro leaves
  • 1 tablespoon chopped fresh parsley leaves
  • 1 tablespoon chopped garlic
  • Salt
  • Freshly ground black pepper
  • 6 tablespoons fresh lime juice
  • 1 tablespoon extra-virgin olive oil
  • Crispy corn tortilla chips

Directions

Combine the first seven ingredients in a mixing bowl. Season with salt and pepper. Add the lime juice and olive oil. Mix well. Spoon into a serving bowl and serve with the chips.

    I made this recipe yesterday and it tastes great! I'm glad I set aside plenty of time for chopping and dicing! It took much... longer than 20 minutes to prepare. I also added a Green Giant Extra Sweet Corn. You microwave it right in the bag, let it cool to room temperature and stir it in. So colorful! A teaspoon of sugar gave the salsa some gentleness. I made the entire batch but put it into two bowls so I could regulate the amount of Jalape?os. Now my granddaughter will have her own milder version and grandpa will be happy with the peppers. I'll make this recipe again with the changes I mentioned above.Read more

    This was a great recipe that was enjoyed by everyone! The recipe makes more than expected. I adjusted it by using two cans... of black beans, rinsed well in the strainer. I didn't have enough time to cook the beans and don't think the recipe was negatively affected. Delicious!Read more
