While this is a time consuming effort it is well worth the journey. I served this to dinner guests on a saturday night. At the following day's Sunday service I believe my guests sainted me a chef - LOL
The blueberry sauce is also spectacular on roasted pork.

The duck confit would have been good enough by itself. Fried with the sauce, it was incredible. Time consuming and complex, but worth every bite.
