    The fried mozzarella is pretty easy to prepare; I did not make the mushroom ragu. The mozzarella turned out great, just be careful to watch it when it cooks. I turned away for maybe an extra minute and the breading had started to come off. The first time I made this, I made the mistake of putting them right on the paper towels, which they stuck to. Now, I just dab them with paper towels when done. A fantastic recipe that I would highly recommend!

    I made this as directed, but without the truffles on top, and sprinkled the truffle oil on, which really gave it that extra something. Served atop bow-tie pasta. We love meat but go meatless almost once a week now and found this to be the best meatless dish we've tried yet. I would not hesitate to serve this to guests. ~ Cook from New Jersey

    There are many Emeril recipes involving a mushroom ragu and I've always wanted to make them. I finally tried this one the other night and my wife and I LOVED it! Delicious yum, yums to cover ANY dish (pasta, chicken, pork, etc.... This was one of the "wild" mushroom combinations, but judging by my selections and the results, it doesn't have to be. YUM!

    This was easier than a medium rating. We had this as our main course and it was so meaty and fulfilling nobody would believe there wasn't any. I saw it on TV last night and had to make it tonight. It reminds me of Austria and Italy.

    I can cook it and I did great. It smelled just as I imagined it would and I was not diappointed with the flavor.I was surprised how the paste thickened and pulled it together (just as E said it would.I will use less thyme as a preference.

    You will love to entertain with this dish because everyone will try to guess what the cheese is ! (is that chicken breast ? Fish ? Crab cake ?
    Wait til they taste it ! Great great great !
