I have not served it for the first time yet. It's made for my special company tomorrow..... my freshman college roommate and her husband from 1955. I dipped my finger in it, though, to see if it passed the tatste test. It's WONDERFUL!!!

This is absolutely delicious! Originally, I used this only to get a good garlic infused oil. I have tried with both parmesan cheese and without. I personally like it just as much without the cheese as with so we usually leave the cheese out. Recently I tried it with a small drizzle of really good balsamic vinegar, the kind that is thick, almost syrup like. It was just delicious! :

Served semolina bread with this oil as a compliment with Emerils Butternut squash and Parsnip soup and it was a huge hit for our dinner party. Will be making this again and again.
