    I finally got around to cooking this up after having the recipe for over a month. I only wish I had tried it sooner! I used a quarter beef stock and the rest chicken stock and the results were stunning. This is a truly rich and complex soup that is very satifying. My wife hates onions but when cooked thoroughly and then once through the food processor, she was amazed...and actually had seconds! Please try this recipe; it is absoulutely wonderful!

    This soup was delicious. It was a different flavor than I have ever had. The only thing I might recommend is lowering the salt to about 1 1/2 teaspoons; I did the original amount, but only because I love salt.

    I have tried numerous garlic soup recipes and have found it is very difficult to find one I enjoy. This is the best one I have found without any doubt. The garlic, cream, and other ingredients are a perfect balance while still emphasizing GARLIC.

    This recipe was fabulous! My husband was raving about the soup for weeks.I accidentally used white pepper instead of the red pepper flakes and it still turned out fantastic. The croutons really made a difference. I have made the croutons several times since for salads or just for snacking.

    I was really impressed at how delicious this soup is and how easy it was to make. I only added about 1tsp of salt and that was plenty. The bread gives the soup such a rich, creamy texture...the only changes I would make are removing the bay leaves before blending and possibly adding more onion and slightly less garlic.

    Very easy recipe and so much flavor for a very short time of cooking. Great on a cold winter evening. Would also be great with fresh spinach or kale added to the bowl then pour soup over top to wilt.

    This is a brillant soup. I love it!!!
    It is so diverse,once it is complete, add veggies to it for a wonderful addition, or plain. A versital, quick and easy recipe that warms the whole family!!!

    DO NOT PUT THE SALT IN!!I cannot understand why no one else had this problem. This soup came out so salty we couldn't eat it. Did I do something wrong?

    My husband and I saw Emeril cook this soup, and we knew we had to try it!
    We did, and it was unbelievably Delicious! And so simple !!
    I was surprised at how Rich the soup was, considering there was no butter added! So yummy and leftovers the next day were delicious. I am sharing this recipe with all my friends and family! You have to try this soup!
