    Hands down the best carrot cake of my life! I actually never much cared for carrot cake, however my son loves carrots and I wanted to bake him something wonderful for his birthday. So glad I found this recipe. I'm eating a piece right now. SO SO SO yummy! He loves it, too.

    This cake was just outstanding. I used a bundt pan instead of the layers and used chopped walnuts instead of the pecans. For the icing I omitted the pecans and added 1 tbsp of lemon juice. Rave reviews for this carrot cake, I have made this twice in two weeks!!

    I made this cake last Christmas and it was delicious - super moist and flavorful, and I had people telling me that it was the best the carrot cake that they'd ever had. It was so good that I was begged by three different people to make it again this year, and so I just finished putting the icing on the cake. One word of advice is that the layers are sticky and have a tendency to fall apart, so if you have enough time to cool them in the pans, I would suggest doing that rather than transferring them to the wire wracks. Luckily, they patch up just fine with the icing, and having the finely chopped nuts in the icing makes it so you can't see where/if the cake crumbles got into the icing. I usually toast some extra pecans and leave them whole and decorate the cake with them to make it look extra special. I have a feeling this cake is going to become a holiday staple.

    WOW!! This cake was awesome!!! I only made a couple adjustments. I used walnuts instead of pecans and added vanilla to taste. That was it, otherwise, I made according to recipe. This cake is so rich and delicious. I also made his coconut cake with pineapple, which was also delicious. The cake was very light and fluffy, but I prefer a richer texture so next time I will add another stick of butter. Emeril made my Thanksgiving with these 2 cakes, everyone LOVED them both. These are a MUST TRY!!!

    Hands down, the best carrot cake ever! I have made this for the past few years for every Thanksgiving and Christmas. I even entered it in our staff "bake-off" at work and it was all the rage. My best friend's 11 year old has even requested that I make one just for him and didn't want his mom take it to his aunt's house for Thanksgiving. People love it because it's rich with all the butter and the warmth of the cinnamon but not overly spicy like some carrot cakes can be. Also, the cream cheese frosting is always a winner. If you are thinking about making this receipe, do it!

    I made this carrot cake for Thanksgiving this year. It was absolutely delicious! It was moist but not dense and very flavorful. The icing was great. Even my boyfriend liked the cream cheese icing when usually he isnt a fan of cream cheese icing. I think the cream cheese taste was subtle and perfect. From other reviews, I baked the cake on parchment paper. This helped with the sticking and it turned out wonderful. I will definitely make this again.

    I am a tough critic when it comes to sweets, so I am not easy to please. This carrot cake recipe takes more time to make and has richer ingredients (3 sticks of butter-ouch! but it all pays off with a delicious outcome. I didn't use the whole pound of sugar for the cream cheese frosting and i skipped the pecans (to help lift the caloric guilt and it was still amazing! I will make this again and again!
