    are you kidding???? this cake is greasy and crumbly. It completely fell apart when I tried to get it out of the pans and then fell apart even more when I tried to move them from the cooling racks to a plate. It had that metallic aftertaste from too much baking soda. I will NEVER make this cake again! There has to be a better one out there.

    So tasty! However, the nuts in the cake make it hard to cut without tearing the cake! Cupcakes are great, though! I love this cake just how it is!!! YUM!

    Once again Emeril, a masterpiece! This cake is very moist and delicious with every bit! The first time I made this cake was a few years ago for Christmas and I have been recruited to make this beauty ever since.

    I am not a big fan of carrot cake, and I loved this. I added 1 cup of raisins instead of nuts, but the raisins seemed a bit dry. I saw other reviewers had soaked them in rum first, so next time I will either try that, or leave them out. I also baked for 35 minutes in two 9" rounds. I made no other changes.....and leave the butter as is. Maybe that is what makes this cake so much better than other carrot cakes!

    This is a wonderful cake, and now, it is wonderful cupcakes as well. Decided to make cupcakes this afternoon and they were great. I baked them for 15-17 minutes, doubled the icing recipe (except for the sugar and it made 30 cupcakes. I think I will decrease the butter as someone suggested, it does tend to sink in the middle because it is quite dense. Very yummy every time!

    I couldn't eat this, it looked so gross. Oily, flat and cracked. I tried the Cardamom Spiced Carrot Cake recipe (also on FN's website and it turned out beautiful and delicious. Give it a try instead!

    Great cake! I made this on my husband's request for a "real" carrot cake instead of the box cake for Thanksgiving. He loved it! He wants me to add raisins next time, no problem babe. It was easy to make and was very moist. My mother-in-law even wanted the recipe! Now that's a good cake! ;

    Best carrot cake ever! My husband LOVE LOVE LOVES it and I can't get enough of the frosting. This cake is a staple at our family parties. People request it and it gets rave reviews every time. A friend likes it so much that her husband asked me to make it for her birthday. Sometimes I omit the nuts or sprinkle them on top, but otherwise follow the recipe exactly. Either way it's delicious!! Thanks Emeril!
