    This was an easy, delicious side dish. I added a bit more salt and another teaspoon of sugar to make them sweeter.

    I've used this recipe with both whole baby carrots and regular carrots cut on the diagonal and just adjusted the cooking time a little longer with the baby carrots to about 15 minutes. The liquid will reduce the longer the carrots cook so keep an eye on it and add a little more water if needed. I go back to this recipe since its not too sweet and I don't have to put blobs of butter the carrots.

    This recipe was very nice. It was fast, easy and very tasty. I followed the recipe exactly as written and it turned out lovely. This will definitely be kept in my 'keeper' file. Thanks you Emeril for yet another fantastic recipe!

    I've never eaten a better glazed carrot. I used baby carrots cut into strips. Highly recommend this recipe. However, the serving size is off in my opinion. 3 cups is not enough to feed four people. I increased it to 4 cups and bumped the sugar up to 2 Tablespoons.

    Emeril on TV and this recipe shows 'whole young carrots' with a tip of the green.

    The online recipe states: "3 cups chopped carrots (about 1" pieces"
    but pictures 'whole young carrots'.

    The problem is not the recipe...it is the photo describing it!

    you know how sometimes glazed carrots can be to sweet or to greasy these were light and just a hint of sweetness PERFECTION!!!
