    i made these because I had zucchini and I wanted to do something different with them so I had all the ingredients and they turned out really good I made my own tomato sauce but next time I'll try emeril's recipe for the tomato sauce.

    This is a great example of a dish that really let's the main ingredient, the zucchini shine. I used zucchini from the farmers market that was so fresh, it really tasted so bright & delicious. I made my tomato sauce the day before, so when it came time to make the recipe it was simple, and took no time at all. The only thing I would say, is that holding the pancakes over in the warm oven turned them from crispy on the outside to "not crispy". When I make these again, and I will, I will serve them immediately off the pan. I was really hoping for leftovers so we could have them from breakfast with a poached egg, but there was nothing left!

    I tried this recipe a couple years ago, and found it to be fool-proof and very tasty. Impressive for guests! I make my own tomato marinara recipe, so cannot comment on that, but like that acid that the sauce offers. Can't go wrong with goat cheese! I will be making it as a New Year's Eve appetizer.

    Never a huge fan of Emeril, but thought based on the reviews that this recipe might be worth a try, plus I looove goat cheese!!! It was not.
    I read and re-read the recipe to see whether I had left anything out, I just found them to be extremely bland and a lot more trouble than they were worth. :(

    I cook a lot of time-consuming recipes. While this isn't a real time sink, for the effort between the pancakes and the sauce, I just thought it was "ok". The sauce overwhelms the delicate flavor of the zucchini and any flavor you might get from the lemon zest and other flavors in the batter. I was however surprised at how well the batter held together despite its "soupy" texture. I might make it again, but would not be top of my list.

    These were absolutely delicious. I did not use anywhere near the amount of oil and you really don't need to since you are using a nonstick pan. The goat cheese is such a wonderful suprise and combines really well with the zucchini. I did not get as many pancakes as the recipe called for, however.

    It has been a couple of years since the first time my husband and I made this dish, but we still remember the savory flavor and melty cheese. You must try this one.

    I don't think I have made an Emeril recipe that I haven't liked. These are absolutely delicious, and have fast become a family favorite, especially with the abundance of zucchini from the garden in summer. We always thought we had tried everything with zucchini, and we didn't want any more, but with this recipe I am now sad to see the zucchini go.
