    We made this the other night and loved it! I didn't have fish sauce, so I left that out and adjusted the measurements of the sauce since it looked like it would make a lot. We loved both the chicken and the peanut sauce; just the right amount of spice. I also didn't have coconut milk, so I used condensed milk instead. This meal was way better than any of our local Thai restaurants. Amazingly, it was even better the next day for leftovers, and my hubby normally hates leftovers. Yum!

    We did the chicken and made a variety of sauces and had a kind of "fundo" chicken night. Peanut sauce, cucumber relish, shoutwest ranch dip, mango/avacado salsa- great for parties!

    I got a lot of raves for this recipe, but I made a few adjustments. Most importantly I think it's important to make the sauce night before (it will be thick, just add water to thin the sauce out. Add HALF of the fish sauce and I also added a tablespoon of sugar (but I think I did that because it was so salty. Adjust the taste of the sauce the DAY OF serving. You'll see that the sauce taste different after it's been in the fridge over night. I really liked the peanut sauce, but if you use this recipe as is - it will be REALLY salty. This recipe make A LOT of sauce, try to a only make half of it.

    I only tried the peanut sauce on this recipe, planning to make the chicken the next day. But after trying the sauce, I don't intend to follow through on the rest. The peanut sauce was pretty bad and the texture and appearance were awful. I've tried Ina Garten's recipe, and should have stayed with it instead.

    I was actually having an urge for peanut chicken skewers from Gordon Bierch when I looked this up. It is close enough to satisfy that urge, and it looks nice and impressive. Too much of a good thing, though, is overpowering. I could only eat onne skewer of chicken. Make this one an appetizer!

    This is a very rich, flavorful recipe. The peanut sauce is outstanding, however, be aware that this recipe is makes quite a large batch of sauce. Way too much for 2-4 people - next time I will half it. Loved it though, and will make it again....many times I'm sure.

    i was underwhelmed by this recipe. my suggestion is looking up the cooking light recipe for the chicken satay and peanut sauce. It adds some lime zest and juice to the marinade that makes the flavors pop.

    I am NOT an experienced cook by any means, but this satay recipe was very easy to make, and a real hit! I did make a couple of alterations (omitting the fish sauce and substituting a bit of chili powder and a touch of black pepper in place of the red pepper flakes but it was still delicious, even after marinating for only an hour. I also placed some lime wedges on the plate with the cilantro, which made for a lovely garnish as well as another layer of flavor when squeezed over the chicken. Yum!
