this was a lot of work for just an okay dish. i would have preferred to use my crawfish (which i had imported from new orleans to san francisco in a more traditional cajun way. not a bad dish, but not great either.

Emeril, you're awesome. I love all kinds of peppers. This was fun to make. Looked great on the plate. The filling in the peppers was wonderful, cool cheesy filling to offset the kick from the peppers,not too hot, just perfect. My family was impressed. You could use cream cheese if you don't have goat cheese,but i haven't tried it.
