I skipped the rice because I'm trying to cut down on our fat intake. But the fish was excellent. I don't think I marinated it quite long enough but it was really good all the same, and I don't care for fish. I found the avocado unnecessary in the tropical salsa, as its texture doesn't really go with the other fruits... but my husband thought the avocado gave it a richer, more comfort-food flavor.
We'll be making this again for sure.

I had to run to the store for a few of the ingredients, like coconut milk, but boy am I sure happy I did! This recipe is absolutely wonderful, the flavors all blended together for an fantastic meal! My only regret is I didn't double the recipe so I could have some for later !!!! My husband loved it so much he commented on it on facebook....heavenly!

We used Mahi with this recipe and served it at work. Everyone raved about it. I'm not sure I would go through the trouble of making the coconut rice though.

This is a great recipe. Made a big hit! I couldn't find Mahi-Mahi so I used Halibut. Worked out great.

This is the first recipe by Emeril with ingredients I can afford. Most of his recipes contain items that are a bit pricey for my budget. My household absolutely loves it. I have made it twice, even with different fish, and it is wonderful. And the rice is very very delicious!

I made this with Mahi Mahi and skipped the rice. It was SOOO good! This dish reminded me and my husband of our honeymoon to hawaii. We loved it! We will make again and again!

i loved it, but i only used the onion, olive oil, orange juice, lime juice, garlic, salt, and cayenne pepper...i marinated it and then grilled it, it was great! i am thinking of trying it on orange roughy.

The marinade makes it taste like fajitas, but it was good. I would do that part again. The salsa was just ok, I would do it again minus the avocado (love it but it didn't belong and definitely lighter on the red onion. The rice tasted like plain rice with a coconut essence to it. The rice was definitely missing something, it was pretty bland. Next time I will marinate some chicken and throw that with some of the tropical salsa and extra cilantro into a pita.
