    I made this last night and can not tell you how good this was. I made this with Mahi Mahi fillets. I was not going to make the whole recipe, but decided to make all of it. The coconut rice was wonderful, and the salsa was great. Will make again,& again, & again. Thanks Emeril. You never disappoint me.

    I love this dish. It reminded me of my honeymoon in Hawaii. I used unsweetened light coconut milk, which made the rice not too sweet! (not to mention less fattening.. Also, we used Chilean Sea Bass, and it turned out great. I will definitely make this again for company.
    I'm looking forward to using the extra salsa for chicken!

    My boyfriend and both loved this dish. The fish and tropical salsa were a great combination. The rice was just ok. This was the first time I cooked fish and it was a success.

    I liked the recipe overall especially the tropical salsa. But, I did not like the coconut rice. it took too long and it was very sweet.

    I have made this several times and it is a HIT everytime I make it. It's light, flavorful and best of all, easy! If you're looking for a good fish recipe, this is it. Absolutely fabulous!

    I loved this meal. I made this with my 12 year old son who helped me with the chopping. As long as you get the prep work done then everything falls into place. The fish was fantastic and the salsa and rice complimented the fish. I would definitely try this again.
