    I loved this meal. I made this with my 12 year old son who helped me with the chopping. As long as you get the prep work done then everything falls into place. The fish was fantastic and the salsa and rice complimented the fish. I would definitely try this again.

    This is definatly worthy of an OHHH AHHH! I loved the coconut rice! It was as good as any I've had at a Thai place. Unlike a traditional Thai coconut rice was the addition of the cilantro. Definatly cut the saltyness. The mahi mahi was fantastic! I would suggest marinating the fish for a few hours in order to really infuse the flavors. The tropical salsa was the best part! I have already started working on ideas to work it into a roasted chicken dish. Lastly, it was so darn easy to make and took so little prep time! I was delighted at every aspect of this dish. THANK EMERIL!!!!!!!!!!!

    I substituted spanish mackerel for the mahi mahi and used mesquite chips with charcoal on the grill. Otherwise, I followed the recipe, and this was undoubtedly the best meal I have ever prepared.

    We tried cloves, cardamom pods, curry and garam marsala, golden raisins, saffron, and oven roasted cashews in our coconut rice but that was the only variance to the recipe.
    It was fantastic! The stuff we added to the rice was good but unneccesary since theres salsa, we just doubled the batch so there'd be leftover rice for the week.

    As mentioned in a couple other reviews, there was a bit of work, but I mitigated that by preparing the salsa the night before. Everything turned out very tasty! I was unable to get mahi mahi so I, too, used tilapia with great results. And the leftover tropical salsa will go great on chicken. Very good recipe.

    I found this recipe when I was searching for a good side dish to go with a carribean meal. I made the coconut rice and it became an instant family favorite. I have to make it all the time now. It's perfect with jerked pork and my own recipe mashed plantains with pork and onion.
