    For the VEGAN in my family (who, in only 3 months reduced his sky-high cholesterol by 32%, going vegan and NO drugs! I used whole wheat tortillas, soy chorizo, and Daiya vegan "cheese". It works into a delicious for us non-vegans too y\by using real cheese and sour cream!!! Crazy good!

    Found this recipe for New Years Eve snacks. O my, so easy and soooo yummy. We customized the toppings, but kept the tators involved in all 10 that we made. It was by far the most sought after food on the bar. Thank you for all you inspirations!

    Make sure you drain chorizo. Very filling! Spicy for kids but good.

    So easy to make that invites you to dare to customize it.

    I did not use the potatos and instead used diced tomatos. Also, I added black olives and for th peppers I used green, red and yellow. Great FINALE!!!!

    I've had chorizo and potatoes rolled into tortillas as breakfast tacos before, but this combination ended up being bad in more ways than one. First, the chorizo is very, very greasy. It soaks through the tortilla. Second, the flavors were terrible. Third, and probably the worst are the 'effects'. Almost everyone at the table was hit with sudden bowel cramping. It was really humiliating for some of us to have to race to the bathrooms, only to not make it in time. I'm still trying to clean the carpet. It was really pathetic to see my five year old sitting on the floor in his soiled pajamas, crying uncontrollably. Thanks for nothing Emeril.
