    OMG! Made this yesterday...followed the recipe exactly and it was off the charts amazing! I have never been a fan of cilantro, but the cilantro oil was a perfect addition.

    Wow! This was so unbelievably good! So good, that I'll be making it again this week-end for guests. I served it with his coconut cilantro rice recipe and sauteed sugar snap peas. We had lots of leftover salsa, so I'll just grill some chicken to go with it tonight.

    Absolutely wonderful. I would cook this for anyone, and/or recommend it to anyone. One thing we did different was stuff the pork tenderloin with cream cheese and gouda cheese (just sliced it open and then held it together with toothpicks. The result? Fantastic. We couldn't stop eating it.... and I'm craving it just writing about it! We actually did 2 tenderloins, so we did one regular, and one this way. We paired it up with oven baked red potatoes (seasoned with olive oil and rosemary, and next time will include grilled asparagus. DELICIOUS!

    The flavor of the pork is spot on. The pineapple salsa is great, especially if you make it the night before. The cilantro oil was so-so, but if you overcook the pork, it will help.

    I made this Pork Tenderloin last night for a dinner party. The grilled salsa with the flavor of the pork was phenomenal. As other reviewers have said, the spiced seasoning of the pork goes so well with the sweetness of the pineapple. I didn't have the Chipotle chili powder, so I substituted Ancho chili powder which gave the pork a deep, rich flavor. I made the pineapple salsa and prepped the pork early in the day, with the exception of adding the lime juice only a couple of hours before grilling since an acid can break down the integrity of the meat over a long period of time. I feel that letting the rub and garlic mixture sit on the pork longer probably helps to infuse the flavors more. I made the cilantro oil, but didn?t drizzle enough over the salsa to really get a good taste of it. I will use more the next time. One note; for the amount of pork called for in this recipe, the salsa recipe makes a lot. I did add a little more of the other ingredients, but a whole pineapple for 2 lbs. of pork was a bit much. No problem though, the leftovers will be delicious over some grilled chicken this weekend or some brie cheese for a nice treat! This is a wonderful pork recipe that I will be making again and again.     Holy Hannah!!!! What flavor, what a combo and what more can I say!!!! Do not omit grilling the pineapple, it puts this over the top. My only mistake was not making enough.

    My mouth watered as I watched the show, so I had to make it. My wife and I truly enjoyed this dish. I made a side dish of mushroom rice (rice, broth, mushrooms, butter, olive oil, cilantro, green onions. Emeril, what a perfect combination of ingredients. The pork tenderloin was so flavorful, and the pineapple salsa was inspired!

    This was such a great dinner! All of us (dinner guests and husband licked our plates. I will definitely be making this again. I added more pineapple then was called for and it made it really good! I served with grilled asparagus and garlic mashed potatos.

    I'm not sure what I can say about this that hasn't already been said. It is a simply amazing dish. There is layer after layer of flavor that all works so wel together. We will eat this often!
