    Ok--can you do ANY wrong when it involves Emeril's bayou seasoning!?!?!?!?!?!? Answer: no, no, and NO! Here's a tip though, only grill it skin-side-down. DO NOT FLIP! Leave the lid to the grill closed so it cooks the top effectively!

    So, so, so good! I only had skinless salmon so I broiled it and sauteed the asparagus. I added jalapeno to the relish (I also omitted the olive oil. This was a fantastic summer dinner, we're going to serve it the next time my in-laws come over! My hubby literally cleaned his plate and went back for seconds. We're going to finish off the the leftover relish with tortilla chips. :

    Great dish. Entire family loved it and wanted it again tomorrow. Even my 8 year old, who is somewhat picky, loved it so much that he wanted and additonal portion of the salsa on the side. I served it with rice and plain fresh asparagus.

    Why bother spending 100 or more dollars for a bad meal at a restaurant ? When all you have
    To do is follow Emerils lagasse ( bam ! recipe and hit it out of the ball park!

    I don't eat fish, but I make this recipe for the rest of my family and have a steak for myself. The flavors go well with both and it is one of our favorite recipes for summer. As my husband is Mexican, so we make the guacamole with cilantro and jalapeno - very yummy. Thanks again Emeril!

    Used wikd Alaskan sockeye salmon and cooked this on our indoor cast iron grill. My cat actually attacked us and took over our plates. She normally doesn't like things too complicated and spicy but although this wasnt' hot spicy, it had a lot of sharp, bright flavor components that kept us looking for a new adventure with each bite. Healthy and delicious even for my husband, who likes everything with habanero, red chiles, and serrano's. We gobbled it up in record time. It is going in the recipe box!

    Thanks Emeril, this was soooooooooooooo good, it is a wonderful dish for the summer because it is lite and easy to make, and when the corn and tomatos are in season it will be even yummier.

    I followed the recipe as directed, and found the relish to be delicious, though my husband did not think so. the flavors are mild in an of themselves, but are great together when paired with the salmon. I only wish the salmon had more taste to it -- perhaps more seasoning would help intensify the somewhat bland flavor. love emeril's style though! ;

    Serve this summer corn salad as a side with most anything. Fantastic!! Use fresh farm-stand sweet white corn and tomatoes to make this light and fresh side dish to go with any entree. I like it with parsley and lemon--so fresh, allowing the fresh flavor of the corn and tomato to dominate, but could also do with cilantro and lime if you want a Hispanic touch. Next time will try grilling the corn to add that grilled carmelized flavor. Will use this recipe again and again.
