Grilled Shrimp Kabobs with Jalapeno Butter

Ingredients

  • 16 large shrimp, peeled and deveined
  • 1 large mango, peeled and cut into 12 1-inch chunks
  • 1 red pepper, cut into 12 slices
  • 1 lime, cut into 8 pieces- quartered then halved
  • 1 small red onion, cut into 8 pieces
  • 1 tablespoon olive oil
  • Salt and pepper

For the jalapeno butter:

  • 4 ounces softened, unsalted butter
  • 1/2 teaspoon ground cumin
  • 1 tablespoon chopped cilantro
  • 1/2 teaspoon finely chopped jalapeno

Directions

Preheat grill or broiler. In a bowl toss the shrimp with salt and pepper. Thread the shrimp and vegetables onto the skewers. Each skewer has 4 shrimp, 2 limes, 2 onions, 3 peppers, and 3 mango pieces. Brush the vegetables thoroughly with olive oil, sprinkle with salt and pepper. Place on the grill and cook for 4 minutes on one side. Meanwhile prepare the jalapeno butter. In a bowl combine all ingredients. Then using a pastry brush, generously apply the butter to all sides of the kabobs, and then flip over and cook another 4 minutes.

    This was delicious and easy. I didn't use any fruit or vegetables this time because dinner got started at 8 PM. I served it with roasted sweet potato fries.I think I could have halved the jalapeno butter recipe, there is a lot left over.Defintely will make the recipe with fruit and vegetables next time.

    OMG! I always read the ratings before making something and find everyone's opinion helpful. I just started grilling so I need all the help I can get. The combination of these ingredients are amazing! Didn't grill the limes like most people mentioned. I also cranked up the heat by brushing a whole chopped jalepeno, seeds and all. (I'm hispanic Gotta try this recipe, thanks Emeril! Your macaroni recipe rocks!

    I took the advice and added more jalapeno to the butter, also reserved a few tablespoons to melt and drizzle over just before serving. I did not bother with the olive oil on the veggies-just brushed with the butter during grilling. Both my husband and I thought this was quite good and will certainly make it again. It is a keeper for us!
