Great summer salad. Grilled 2 ears of corn and cut the kernals off the cob and added it to the salad. Marinate was great as the dressing for the salad.

Great shrimp recipe! Didn't cook the shrimp on the grill but on my grilling pan to save time and money! Loved the marinade..I didn't have limes so I used lemons instead..As far as the lettuce greens, I added what I had..Baby Greens, boiled eggs, grilled asparagus, tomatoes and pickled baby corn in a jar. The reserved marinade used as dressing was delicious...

ssssoooooooo good! I changed a couple things, didn't have cilantro and I used field greens as a base for a salad. I also added some corn, red pepper and onion to the salad. I also used half a can of mandrin oranges. This was a perfect, quick summer meal. I would say that the hour and six minute total time is over shooting it. this probably took me only a little over 30 minutes because I didn't use scewers and while the shrimp were marinating I got everything ready for the salads. Once the shrimp were done marinating I threw them on a grill pan for 4 minutes then divided them among the salads. I will be making this one again and again and again!!

I love this recipe! The marinade is very unusual and so tasty. I serve it on a platter atop a bed of baby spring greens. I place the avocados, oranges and shrimp skewers over the greens, then pour the reserved dressing over it. I looks elegant and festive.

Made for dinner. Used indoor grill. Layered all ingredients on a bed of raw spinach. Family loved it! Flavors were wonderful!

Ever since I got an indoor grill pan I cannot stop using it, and am having a blast trying new salads with marinate shrimp! This salad was so fresh and juicy with flavor! I put it on a bed of Arugula and made cornbread w/honey & pinch of cayenne as an "encoutrement". Emeril Rocks!

My husband and I loved this recipe and will be making it again and again. I made the marinade 3 hours early and left the shrimp in it in the fridge and the shrimp tasted great. Definately something that is easy to make ahead and comes together quickly! And it made me a hero at the dinner table, thanks Emeril!
Now for my goof - I did not read that it was an appetizer so I made it for our dinner. Definately not enough for two people for dinner but could easily be doubled and then used as a meal!

My family loved this! It will be on our menu from now on. The flavors are great together, I used canned manderin oranges because it was easier and I thought they worked well.
