I made this last night as an accompaniment for chicken fajitas and it was DELICIOUS! Can't wait to eat it cold today. The recipe sounded like it might be a bit spicy, but the flavors balanced together beautifully. And the aroma was fabulous! I added a little extra lime, because I love it, and a bit more than a pinch of cayenne, but there were a lot of potatoes. Emeril, your recipes have never failed to please me and mine.

This was the best, we prepared this last week on the grill. It was an amazing twist to one of our favs, sweet potatoes. We found the flavors to compliment each other and the sweet, crunchy, patatoe mixture was genius, I think I will go make some more. thank you!!

I was looking for a good alternative starch to some thick cut pork chops than your standard baked potato or baked sweet potato. I did everything right and it looked good going into the oven but when it came out, it just didn't have much sex-appeal. tender and properly cooked but it served almost like mush. It tasted ho-hum too. just a simple baked sweet potato would have been better. Lucky the pork chops were grilled perfectly and could carry the blah side dish.

I didn't have the mango but had everything else to make this and it was wonderful - more like a side dish than a salad. I served it with smoked pork chops . I made it in the oven but can't wait to make it at our next camping trip on the grill. I didn't have the peanuts eiither. The spices made it so delicious!

Served this to our wine club right off the grill and the spice and vegetable/fruit combinations made it a great side dish, well loved by all. The foil packets kept all the flavors in and made everything soft and flavorful.

After reading the ingredients, I thought this would be interesting. It was a hit at our bbq party! I was unsure of the ingredient combination, but they really do blend very well!

Been thinking about making this for a week so today was the day. Didn't have lime so used lemon..didnt' matter. This was PERFECT and flavorful side dish to my pork chop. Cannot wait to share it with friends and family.

Love It! So flavorful and healthy! The dark juices on the bottom of the foil is where a lot of the flavor is! Use every bit! mmmm, perfect Summer grilling dish!

good combination of flavors, very colorful. Makes a lot. Best to prepare ingredients the dat before as it's a lot of prep work.
