- 2 large tomatoes, sliced 1/2-inch thick and grilled
- 1 red onion, sliced 1/2-inch thick and grilled
- 1 tablespoon chopped parsley
- 1 tablespoon chopped chives
- Freshly ground pepper
- 2 tablespoons truffle oil
Roughly chop the tomatoes and onions and place in a large bowl. Add parsley and chives. Season with salt and pepper and drizzle with truffle oil. Mix well.
