My wife does not really like venison but she loved this meal. I used butterfly cuts from the tenderloin which were very tender and the mushroom sauce was excellent.

I made this for my family for Christmas Eve dinner and everyone loved it. The mushroom sauce has a great flavor. Even the people who don't really like mushrooms tried them and liked them. I will definitely make this again!

My recipe came out looking just like Emeril's did. I imagine it tasted just a great too. My family LOVED it and I'm sharing it with all my friends who have hunters in their families.
