The flavor was great, the gumbo could use a little more color in the broth for presentation, easy to fix with a can of tomato sauce

This is less a review than a question. When I made this, I skimmed off 1.5 cups of fat. That's a lot of fat. Now suppose I boil the chicken and strain the broth, then let the broth settle until the chicken fat is on top. Then I use the chicken fat to make the roux, augmenting with oil if necessary. Will the roux still be okay?

This was not hard to make, though you had to stay near the stove. It had the BEST flavor! and my kids thought it was awesome! I will definitely make this again!
