    The key ingredient to bring it all together is to finish it off with the Essence seasoning.

    We have had a Fat Tuesday party the past seven years and this dish is always one of the big hits . I will substitute a creole seasoning for the cayenne on occassion and probably double the amount of andouille as everybody wants a piece of that. Tastes great even reheated a few days later.

    I followed the recipe but used a smoked turkey leg and smoked turkey sausage to reduce the fat and salt. Delicious!! I also cooked it in a slow cooker on medium overnight. The turkey was falling off the bone tender.

    I added Tabasco and a habanero sauce while the red beans and hamhock was cooking to spice it up. The whole family loved it. Perfect for a rainy day in Washington!!

    I always trust Emeril when it comes to any southern recipe. The man knows his beans!!! This recipe is solid - just make sure your choice in the sausage department is worthy of the recipe itself, cause it's a make or break ingredient. One thing you can do to make this recipe extra decadent is to add a few tablespoons of LARD to the mashed bean mixture.

    Followed recipe but guess there's no good anduille in Maine. Tasted like hotdogs and beans with a nasty aftertaste. Haven't had much success with the cajun meals. The essence was good however, just add 1/2 the oregano.

    I first made this a while ago and have made it a few times since. It's very rich and it's not exactly the kind of thing you make every day, but OMG it is good. The combo of flavors is incredible, like nothing I ever tasted before. Make it on a cold and rainy weekend and curl up with a good movie.

    I just made this a couple nights ago. It was super easy, and it turns out this is the best red beans and rice dish I've ever had! I could help having a whole extra bowlful it tasted sooo good. It was even better than anything I found during 3 months in New Orleans a couple years ago. I halved and 1/2" sectioned the sausage instead of leaving them as links, and went a little bigger on all ingredients except the seasonings. I still have a potful of the mixture in my fridge and can't wait to try again now that the flavors are blended even more. Spend the time to make the Essence - it is a key to the taste - and oh, boy that taste. Definitely worth a try.

    I stumbled across this recipe when my husband requested hamhock and beans. I substituted canned red beans. Turned out fantastic!!!!!!!!
