    I just finished serving this for lunch,and was a big hit! I didnt have any celery,I added some diced red pepper,2 fresh bay leaves,some ground beef,some smoked pork meat and I didnt use chicken stock,I used water and beef buillon cubes.I cooked everything in a pressure cooker and it was ready in 35 minutes.My husband ate three servings,and didnt let me put the leftovers in the fridge,he wants this for "snack" too!Thank you Emeril!!!

    I have made this countless times and it pains me to see it with anything less than the highest rating. This recipe is outstanding. Add two jalapenos (seeds and all when you saute the vegetables for extra zip. I always get raves and zero leftovers when this dish is made.

    This recipe makes great red beans and rice. The seasoning is just right. However, someone needs to update the top part of the recipe. The prep time, cooking time, and number of servings are all wrong. This recipe makes at least 8 servings, maybe more. Still, the flavor is awesome. Makes me miss the Big Easy.
