    The flavor of this chicken is wonderful! I did not add the lemon because my husband does not like lemon. However, it was still delicious. For the vegetables, I did a medley of potatoes, broccoli, cauliflower, celery, and cabbage. I also added a small amount of fresh garlic, thyme, sage, and parsley to the olive oil, salt, and pepper. Everyone loved it!

    The end result was great, but my husband was bit upset when the smoke alarm went off. I wish I had read the reviews sooner. I will put either wine or water next time as well as less oil.'

    We had just alittle leftover herb roasted chicken. So the next day I made some chicken and noodles. The chicken add so much flavor to the noodles.

    Like many before me, I skipped the veggies and just cooked the chicken. Unbelievable flavor from the herb rub. I added some water to the bottom of my pan (chicken was on a rack and had no smoke problems. Only suggestion I have is to maybe cook the bird an extra 10 minutes or so but that really depends on your oven. Enjoy!!

    Just the way I like my recipes. I received a whole chicken from our farm share and needed a quick and easy recipe for roasting it. This was my first time cooking a whole chicken and it turned out wonderfully. Thank you!

    This is a great technigue for roasting chicken. The herb rub and a heavy seasoning makes this soem of the most tender and flavorful chicken. You can go a little lighter on the oil however!

    I tried this recipe and had a slighty different combination of herbs on hand as well as a more limited selection of root vegetables and it was still very easy and very delicious. I would highly recommend!
