This was a wonderful dish that pleased everyone. I was surprised how many had never heard of spaghetti squash or had experienced the versatility of this awesome food. Very inexpensive and makes a great dish on it's own or a companion dish. With so many ways to use it the taste can go many directions. Best of all is the healthy nature. Low in calories makes it a favorite of mine.

This recipe for spaghetti squash is one of the best I have made. I used 1 Tbsp. basil and 1 Tbsp. parsley but will try other herbs as I have them. I put the squash in the microwave for 5 minutes to make it easier to cut in half. I can't wait to make this again for friends and family!

I loved the cooking method for the squash it was perfect. The flavor and herbs were just okay. I"ll have to try again in the Spring when everything is fresh

I've always wanted to try this type of squash, and this was a wonderful introduction to the food. Its also very nice with mozzerella cheese on top.

Easy to make & healthy. However, my boyfriend and I felt it needed a little something to boast the taste. A little on the bland side. I would make it again...he would not.

We fixed this dish and it was great. I used most of the suggested herbs and it came out perfect. We did add some crumbled goat cheese on top when we served it for a extra kick was really good thanks. Next time we are going to try the oven roasted tomatoes too.

I liked this recipe ,however it did need a little kick . I added a can of italian herbed tomatoes and found it added a little more flavor and nutrition.

This was so easy to make! Honestly, the hardest part for me was cutting the squash in half! And it was so delicious! I added my own little twist to it... I used some classic italian herbs that Emeril suggested: parsley, basil, oregano and sage. Sauteed some shallots and garlic in olive oil, added the spaghetti squash and the herbs and let it all cook together for a few minutes. Then, after I moved it over to a bowl, I folded in a dab part skim ricotta cheese and sprinkled parm on top. I could eat this every night!

Very simple to make and perfect compliment to main dishes. Very fresh tasting and requires very little effort for the most part.
