Delicious recipe. The vinaigrette complements the trout in an amazing way. The only problem I had is that the vinaigrette got so hot that little bits would come flying out of the pan -- almost started a fire on the broiler coil. The fear of burning my house down has kept me from making it again, but the taste was fantastic. I might try grilling it once the weather warms up.

in just about five mins you can have this at your own dinner..its tasty, quick and goes perfectly with the risotto from the same episode.

Used Ruby Red Trout...the ONLY thing I changed (don't you hate that was to use fresh Thyme instead of Oregano. What a marvelous dinner. Fit for a King. I would even label the recipe "Herbed Ruby Red Trout" because R R Trout can easily be overpowered but Emeril your recipe made it PERFECT. Today you are my hero. My husband thanks you also....
