OK--you lavender challengers, relax! To ks--no college professor accepts Wikipedia as a reliable source of information, so neither should you. However, in this case, lavender is a LESS traditional ingredient in herbs de provence, however it is still only a variation. The French did indeed add lavender much later to connect with the tourists enamored by the fields of lavender in Provence. Orange zest, tarragon, mint, and other ingredients are also variations that can be added to the standard basil, marjoram, thyme, etc. So, if you like a little hint of lavender, simply add a teaspoon to Emeril's mix....and, just so you know--I did do my research.

Because others have commented on the lack of lavender - This from Wikipedia: Lavender is only added in American mixes but is not used in French traditional mixes. So to Joe: perhaps you should do your research before throwing stones at a world renowned chef.

Chefs always tell you to use Herb de Provence; but they fail to tell you what's in it. Thank you so much for such kindness in listing all the herbs you need. My chicken breast were to die for, the flavors were exploding in my mouth, my guest were really impressed. I'll be using this recipe in other dishes

What makes Herbes de Provence special? Lavender, that is what makes this seasoning special and distinctly French.

I wanted to make Sandra Lee's "french pork chops" but couldn't find Herbs de Provence at Wal-mart. I am glad I found a recipe for it. I grow herbs here in hot Palm Springs and can dry my own stuff.
