We made this salad on Christmas to go with our dinner. Not only did it present beautifully, everyone LOVED it! goat cheese packages were phenomenal. All in all an excellent recipe.

I was looking for more ways to use pomegranate. I had pomegranate blueberry jiuce so I used that instead of straight pomegranate juice. I also used red onion instead of shallots (which I find harder to keep around . Like one other person, I thought the dressing needed more kick so I added more of the juice. You can add any type of lettuce or greens. I also added some sticks that I made of jicama to give it a nice crunch. This dressing was nice and tangy , easy to make and can be made ahead of time. When you are ready just toss the salad and add the salad dressing.

This was a wonderful salad. To save time, I used a pre-washed green mix. The dressing was excellent, although I did add a little more pomegranate juice and a touch of sugar to sweeten it just a bit. The oranges and pomegranate seeds added wonderful color and flavor. Goat cheese bundles were a fabulous touch and made the salad seem quite gourmet. Guests loved it and were asking for the recipe!
