    Wonderful Salad! Made for Christmas dinner and my son asked to have it again soon.
    Very fresh and lite. Would be great for a summer meal!

    I made this salad for Christmas dinner years ago. It has become a favorite. It's fresh, bright acidity is welcomed at a meaty, heavy dinner. It is delicous.

    This is the most fantastic salad and has become a holiday tradition in our house. The oranges and pomegranates add just the right festive touch. I have never added the prosciutto wrapped goat cheese (both are expensive ingredients and we usually have a huge crowd and don't miss it, although I am sure it would be wonderful. This year I am going to crumble goat cheese on top. One crucial ingredient is the pomegranate juice used in the salad dressing; it gives the salad its distinctive flavor. Do not substitute. Thank you, Emeril, for another fantastic recipe.

    This salad tasted terrific and looked awesome. I only used 1/2 to 2/3 of the dressing so I just saved the rest. Also, I think I could have used smaller portions of goat cheese. This is a substantial meal in itself so I think it would be great as a main course!

    This salad was a serious hit! This is now a Christmas tradition. Everyone loved it. The prosciutto with the goat cheese was incredible.

    Marvelous - the flavors are diverse and meld together wonderfully. Great presentation - the pomegranate seeds are a nice touch and the goat cheese and proscuito make the salad sing.

    Everyone loved my Christmas Dinner contribution which was fantastic to look at and tasted even better! I zapped the prosciutto in the microwave about 15 sec and then wrapped the goat cheese while it was still hot then zap it again for 7 to 10 sec. It really allowed the cheese and meat to get to know each other and looked great on the salad. Had several request for the recipe, one from a restaurant owner!
