You can create up to five timers

Ingredients

  • 2 egg yolks
  • 1 teaspoon fresh lemon juice
  • Dash of hot pepper sauce
  • 2 teaspoons water
  • Salt
  • Freshly ground black pepper
  • 1 stick melted butter

Directions

In a stainless steel bowl set over a pot of simmering water, whisk the egg yolks with the lemon juice, hot pepper sauce, and water, until pale yellow in color. Season with salt and pepper. Be careful not to let the bowl touch the water. Remove the bowl from the pot and whisking vigorously, add the butter, 1 teaspoon at a time, until all is incorporated.

    I have to be completely honest, I normally LOVE emerils recipes but this one was so bland and blah. made me sad. I have tried 6 or 7 different hollandaise recipes and this one was at the bottom. I followed it to a T and it was very thin, bland and I had to Jazz it up with other ingredients. What a shame.

    Just made this morning. I wasn't sure what whisk until pale yellow. I knew it takes 15 min. so I tried, but I don't think I cooked the yokes long enough, too thin. Next time I'll use 2 Tbsp lemon juice, 1 Tbsp water, add a little cayenne, cook yokes until it thickens.
