    Just made this morning. I wasn't sure what whisk until pale yellow. I knew it takes 15 min. so I tried, but I don't think I cooked the yokes long enough, too thin. Next time I'll use 2 Tbsp lemon juice, 1 Tbsp water, add a little cayenne, cook yokes until it thickens.

    I am sure it is good but I didn't try it, sounds like a lot of work.
    I learned this one from a chef 40 yrs ago
    melt 1 stick of butter
    add 3 tbl spoons of lemon juice
    whisk in 2 egg yolks
    stir on low until creamy, about 5 to 7 minutes. keep on low heat, do not overheat.
    works every time.

    I was very nervous at the beginning of the recipe. What is "pale yellow"? How long will it take to turn "pale yellow"? Is it "pale yellow enough"? But, when I tasted the completed sauce, "BAM"! it was a flavor burst in my mouth! LOVE the recipe and will continue to use it! Thanks Emeril!

    P.S. One quick change I made - I used the juice of one half lemon - maybe a little more than the recipe calls for - yummy!

    Very easy to make, simple, and versatile. It seems like it is missing a spice, maybe that is left for the cook to figure out. Added it to a slice of french bread, havarti cheese and a slice of turkey. Very good.

    Made this sauce for Christmas dinner, over Asprargus. first time making this. At first I thought , great we'll end up with food poisoning later tonight. But this sauce was amazing. Everyone loved it. and no trip the emergency room. thanks Emeril.
