    The "zip" or bite in mustard depends a lot on freshness. Fresh seeds, freshly ground are much zippier than that made from older mustard seed. Keep that in mind and try to get fresh (try an Indian or Asian market mustard seed. Also decreasing the amount of wine and increasing the vinegar puts more bite in the final product.

    We like this best with 50/50 yellow and brown mustard seed (3 Tbs each.

    Loved this! I did add a couple cloves garlic and a heaping tablespoon of horseradish for an extra kick, but this was so easy and delicious to make. I'll definitely be making it again.

    Nothing in a jar compares to this mustard. Giving it a day or two to let the flavors blend is important. it is a combination or dijon, creole, and stone ground. Its great on everything.

    My family loves mustard, and we love to cook, so we looked for a mustard recipe and found this one. It is great to say the least!! We make a batch each week now. I will say that because I like my mustard a little spicy, that I'll add a little horseradish from now on.

    It is spicy but not over the top. I was looking for a good deli mustard recipe and this is not it. Nonetheless, I think this would go good with low key sausages, eg. brats, veal sausages, etc.

    I've been missing GOOD homemade mustard since the little old man in or community stopped mading it.
    This recipe is so simple, and tastes great. You can add any combination of herbs and/or spices to change the flavor. Add honey, roasted garlic, just about any thing you like. The skies the limit! THANX Emeril, It's the bomb!
