Homemade Thousand Island Spread
Recipe courtesy Emeril Lagasse, 1999
Show:  Emeril Live
Episode:  Emeril's Deli
1 egg*
1 lemon, juiced
1/4 cup chopped onions
1/4 cup chopped green bell peppers
1/4 cup chopped sweet pickles
1/4 cup chopped green olives
1 tablespoon chopped pimientos
1 hard-boiled egg, finely chopped
3 tablespoons ketchup
1 tablespoon finely chopped fresh chives
1 tablespoon chili sauce
Salt
Freshly ground black pepper
1 cup vegetable oil³73

Combine the first 10 ingredients in a food processor with a metal blade and process until smooth. Season with salt and pepper. While the machine is running, slowly add the oil, a little at a time, until thick. Re-season if necessary.

*RAW EGG WARNING
Food Network Kitchens suggest caution in consuming raw and lightly-cooked eggs due to the slight risk of Salmonella or other food-borne illness. To reduce this risk, we recommend you use only fresh, properly-refrigerated, clean, grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell.
