    Super Easy! Made me look like a Rock Star! The chicken was very tender and the skin awesome! I used lemon peel and lemon juice , didnt even have real lemons and it turned out great! Thanks Emeril! My Husband thinks that I can cook :

    This recipe is not only easy but delish!!!!! I used baked mac and cheese instead of the sweet potato and it was still a GO!! Will be making it again....

    OMG!!! This is delicious!!! I had chicken thighs so I used them instead of a whole chicken and followed the directions given. I made the sweet potatoes for myself and roasted regular potatoes for my sons. Cooked the thighs for about 50 minutes; the skin crisped up and the meat was so moist. This is a meal that will definitely be made again and again. Thanks Emeril--this is a winner and keeper.

    Okay I'll admit that sometimes when checking out a recipe for the first time I don't always follow the exact directions. So when I read that we should place the chicken on top of the sweet potatoes and then pour the juice over the meal I hesitated. However I threw caution to the wind and did exactly as told. DELICIOUS! I kept thinking if I hadn't been brave enough to get over myself I would have missed out on how yummy this meal really is. Had I not done what Emeril suggested I would have been disappointed (not really because it was too good to miss all the flavors and the juice from the cooked chicken oozing over the top of the sweet potatoes get 5 stars. Adding this one to my " don't miss this" recipes. Loved it.

    Absolutely marvelous. My husband and I made this meal together. It seriously deserves five stars--healthy, inexpensive, and very satisfying. A great Sunday dinner.

    I made the mashed sweet potatoes. I left out the maple syrup, used about 1/2 the amount of brown sugar, and added more than a pinch of salt. It was delicious. I thinking baking the potatoes, instead of boiling them, gave them a much fluffier texture and very tasty. My guests commented on how good the potatoes were and asked how I prepared them. They were surprised to learn that they were sweet potatoes -- they both said that they usually don't like sweet potatoes.

    This recipe is incredibly easy and delicious. I brushed with the sauce twice while cooking it instead of once and it came out juicy and moist.

    Is there cooking time omitted from this recipe? Will a whole chicken cook to 180 degrees in 45 minutes?

    If you want a tangy, flavorful roast chicken, this is good at is gets. And it will be better than you imagine! I make this easy roast chicken dish quite often. It's one of my two favorite roast chicken recipes, the second being Emeril's "perfect roast chicken" recipe, that can also be found on the foodnetwork website.
