Fabulous! I like to cook with boneless skinless chicken so I used the honey mixture as a marinade. I used half to the honey recipe in a baggie with the chicken, and saved the other half. Then I barbecued the chicken and use the remaining honey mixture basting the chicken while grilling.
The mashed sweet potatoes where so good, that there wasn't any left for leftovers. (We like them sweeter so I doubled the brown sugar and maple syrup.
You won't be disappointed by this recipe

This is delicious. My boyfriend and I loved this. He particularly loved the mashed sweet potatoes. The chicken was very easy and I've made this with and without the sweet potatoes several times. I always make a bit more of the honey mixture because I want the entire chicken coated. The recipe makes just enough, but if you have a heavy hand like I do then you may want to make just a bit more.

This was great, although I made a few changes that I think made it easier/better, no offense Emeril. I added 4 cloves of garlic, shoved 2 of them with the butter under the skin. I stuffed the cavity with the lemon (after zesting and squeezing some of the juice, sliced, garlic and thyme. I squirted honey over the top, and added a cup of chicken broth, all before putting it in the oven. I basted it a few times throughout and also baked the sweet potatoes simultaneously. When the chicken was done I poured all the liquid into a pan, added an 1/8c sugar and simmered until syrupy. I just added a bit of cream to the sweet potato, and poured the sweet sauce over it all, perfection!!!

This was a very easy and tasty recipe. I made this before soccer practice and came back and all there was to do was heat it up. The ingredients are simple but combined taste wonderful. I left off a star because although my family loved the sweet potatoes, i thought they were a bit too sweet. But overall, great recipe and i would recommend it!

Looking for a new way to bake chicken, this turned out to be perfect. The combined flavors from the chicken, sweet potatoes, and leftover chicken juice drizzled on top was simply delicious. Although my kids are not fans of sweet potatoes, my husband and I enjoyed. Thanks Emeril!!

This was my first ever roast chicken and I'm so pleased with the results. I brined my chicken overnight and I think that helped to make it even juicier. The glaze was delicious and I wouldn't change a thing. For the sweet potatoes I ended up just mixing in the pan drippings (no butter, cream, or syrup and it was quite tasty.

OMG!!! This is delicious!!! I had chicken thighs so I used them instead of a whole chicken and followed the directions given. I made the sweet potatoes for myself and roasted regular potatoes for my sons. Cooked the thighs for about 50 minutes; the skin crisped up and the meat was so moist. This is a meal that will definitely be made again and again. Thanks Emeril--this is a winner and keeper.

Okay I'll admit that sometimes when checking out a recipe for the first time I don't always follow the exact directions. So when I read that we should place the chicken on top of the sweet potatoes and then pour the juice over the meal I hesitated. However I threw caution to the wind and did exactly as told. DELICIOUS! I kept thinking if I hadn't been brave enough to get over myself I would have missed out on how yummy this meal really is. Had I not done what Emeril suggested I would have been disappointed (not really because it was too good to miss all the flavors and the juice from the cooked chicken oozing over the top of the sweet potatoes get 5 stars. Adding this one to my " don't miss this" recipes. Loved it.
