I made the chicken part of the recipe. The end result was very moist and tasty chicken (even the white meat, however the skin was a little too dark on top of the bird because I increased the temp. Since I don't eat the skin, that wasn't a problem. I like chicken well done, so I bumped up the temp to 425 and roasted it for 1 hour and 15 minutes. Also put a halved lemon in the cavity. I'm going to try the recipe again with this temp and time, but do the following: 1Make a little more of the honey-butter mixture & thyme and put some under the skin; 2 Keep a closer eye on it and tent it with foil if it starts getting too dark. Overall a simple recipe for great roasted chicken, with a unique flavor. Gave it 4 stars because it needs a little adjusting.

This recipe is one of my favorites for using a whole chicken. I usually stuff the chicken with cut up lemons and garlic just adding to the good flavor.

The sweet mashed potatoes were awesome, although I did have to leave them in the oven a little longer than an hour and 15. I used all the ingredients but did half and half with the light brown sugar using some cinnamon sugar, beacause I just love cinnamon. I used a whole chicken and used all the ingredients except for the thyme, I went ahead and substituted with oregano. I also read the review of someone that put orange and lemon in the cavity. Great idea! Yummy! I'll make this again in the future.

I'm sure the mashed sweet potatoes are good, though I didn't make them. The chicken was juicy and had a good flavor. Be prepared for the skin to be sweet, but otherwise, very easy to make.

I tried this recipe with orange zest and juice instead of lemon. It was very sweet but prolly cause of the orange substitute. But after overall it was pretty good.

The Chicken was so moist and tender. My husband doesn't like sweet potatoes so I just baked a dish of root veggies with the same marinade and they turned out great too.
