Easy, practical, a little different approach to chicken.

I also stuffed the cavity of the chicke with lemon, onion, and a little celery. I also agree that it took a while longer to cook than the recipe, but when it was done- BAM! Absolutely deliscious - made with the mashed sweet potatoes! It's a hit, thanks, Emirl!

I rarely make Emeril's recipes, because they seem complicated, but this was really easy to make and really tasty as well. The honey on the chicken formed a nice glaze (I used boneless breasts instead of a whole chicken, and it worked fine. A nice meal overall!

Only made the sweet potatoes for my mock (pre-lim thanksgiving dinner, everyone asked for seconds and everyone wanted the recipe. I was skeptical it would be too sweet, but it was it's own little version of heaven. I loved it and it has it's own place in my recipe book forever.

I AM NOT A SWEET POTATO PERSON BUT WAS LOOKING FOR SOMETHING DIFFERENT TO DO WITH CHICKEN AND NOT ONLY TRIED THE CHICKEN RECIPE BUT THE SWEET POTATO ONE AS WELL AND WAS PLEASANTLY SURPRISED THAT I LIKED BOTH RECIPES AND THEY WERE VERY SIMPLE TO MAKE.

Even my very picky 7 year old relished this! I didn't make the sweet potatoes (we don't eat them but the chicken was very flavorful. A real family pleaser. Will make again.
