    I thought the chicken better than most folks seemed to - although I used chicken quarters. The sweet potatoes were heavenly, heavenly, heavenly.

    I can't believe how good this recipe turned out. My chicken looked exactly like Emeril's did when it came out of the oven. It was yummy. I kicked it up a notch by adding half a lemon and half an orange in the cavity of the chicken while roasting. My friends and I pigged out on this. Was much left over after we got done. The mashed sweet potatoes were amazing. The only ingrident I didn't add was the maple syrup because I am not a big fan. I will never eat sweet potates any other way again. Absoutley wonderful.

    I used a big chicken so it took longer than suggested. I was out of honey so my husband suggested butter pecan syrup (for pancakes. It was delicious! Sliced up parsnips on the bottom of the pan tasted like candy. For quick clean up of this sticky meal I tried aluminum foil on the bottom of pan. Worked like a dream. Definite repeat!!
