Excellent appetizer!! A great crowd pleaser!! I just wish FOOD NETWORK would list recipes with the portion adjuster. I don't want 6 cups of dip!! I know, easy to figure out, but it would be convenient. I make 2 cups of dip at a time. I tend to wing it a little, and go with what I have. That's okay too. :

Very good dish, just make sure not to overcook the corn or it turns chewy and sticks to your teeth, not pretty. But this tastes really delicious if done right!

I first made this dip many years ago. I take it with me to parties; it travels well. I have never taken it when I haven't been asked for the recipe. Everyone loves it! It makes me look like a great cook! It really is delicous.

I love this reciepe but I do tweek it just a bit or you will end up with more corn than anything. I use almost two whole peppers and a small onion and of course more cheese than recommended

I've been making this since 2005 - and my friends always ask me to make 'my' corn dip. I've become the corn dip queen! I don't sway too much from the original recipe, but I usually dont measure anything - it's all from feel. My input is to always use fresh grilled, or sautee'd corn, if possible. I will also use a 1/2 of habanero to kick up the heat depending on who I'm serving. I also sometimes add a little bacon, and always add chopped fresh cilantro to the mix.

The chips that have become a staple for this recipe are the Frito Scoops...they hold alot more of the dip...This recipe will follow me forever!
