    I run a small catering business and use this for casual client parties-always a hit especially with the younger crowd-really good for Super Bowl bashes! Creamy with a little 'tooth' from the corn-so good!

    I love love love it and everyone who tries it does too....I vary it with cream cheese (*only cause I forget the recipe 1/2 the time add sour cream...you can put black beans in it, green chilies....clack olives, red peppers for color....it is wonderful..Thanks Emeril!!!!!

    This is my "Go To" hors d'oeurves for summer or winter. Most of my parties have 30 or more guests and this doubles and triples well. Everyone asks for it over and over again. My daughters 22 year old boy friend, who is on active duty, called to ask for the recipe to make for his friends. And he's never cooked before!

    I made this for a family get together, once they tried it, it was gone within 30 minutes, and have asked me to bring it to several more functions. it is soooo good !!!!!

    I have served this at outdoor BBQs and at indoor sports fests and it is always a HUGE hit. One tip: go light on the mayo and double the jalepeno (I even leave a few seeds in before mincing for an extra kick!
