I substituted coconut water for the coconut milk to avoid the incredibly high fat content then thickened at the end with a little corn starch slurry. It was still incredibly flavorful, will definitely make it again.

My husband and I saw this episode of Emeril Live, and made it the next night. Now we make it often, especially when we want to wow our guests. It is super easy and delicious!! Try it - you'll see.

I've added this awesome dish to my Indian menu! It's easy to make and the coconut adds a nice compliment to the shrimp. We like it a bit more spicy.
