    Rave reviews from the wife. I found, however, that the medium shrimp called for come out rather scrawny after grilling. I'd suggest using large or bigger. And pay attention to the serving sizes - there's no way you'll satisfy people with just 4 shrimp per person, that's one skewer! Better double it for 4 people (or more.

    This was both a fun and excellent recipe, does take time but well worth it, did make a significant change in the rum butter sauce, add sugar, we made both ways and the one we added sugar to won hands down, we added approx 1/3 cup to whole batch...just add to taste. (and would highly recommend to only make 1/2 batch of it as both times had lots left over.
    Was very attractive to serve! ENJOY

    This moderately easy dish from Emeril is fantastic...serve it to company and just watch them lick their plates. The combination featured here are a cornucopia of flavours in your mouth...Way to go Emeril. I love it, my husband loves it and all my company love it. Many thanks once again.

    I made this for a Father's Day BBQ and it was a big hit. It is a time consuming recipe however. I was making it for about a dozon people and it took well over an hour to wrap all the shrimp. I also did not care for the rum/butter sauce, I would not make that again. The dish is rich enough without all the butter on top of it. On the other hand, our guests seemed to enjoy it. I will make the skewers again, but for less people next time :

    i made this last night and my family thought it was good. I wouldn't say that it was the best shrimp recipe I have ever had or made but it was tastey. Very easy to make just a little time consuming wrapping the shrimp. I liked the way the proscuito got a little crunchy on the grill. The rum butter sauce was good but tasted mostly like melted butter. Not many other flavors in that.
