Ingredients

  • 4 slices bacon, diced
  • 2 pounds Italian sausage, removed from casings and crumbled
  • 2 cups finely chopped red onions
  • 1 tablespoon plus 1 teaspoon Essence, recipe follows
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons minced garlic
  • 2 bay leaves
  • 8 cups chopped, seeded tomatoes
  • 6 cups chicken stock
  • Salt and freshly ground black pepper
  • 1/2 cup finely chopped fresh cilantro leaves
  • Crusty bread, for serving

Directions

Cook the bacon in a medium pot over medium heat for about 2 minutes. Add the sausage and cook with the bacon until browned, about 5 minutes more. Add the onions and Essence and cook, stirring often, until the onions are softened, about 5 minutes.

Add the crushed red pepper and garlic and cook until fragrant, about 30 seconds. Add the bay leaves, tomatoes, and chicken stock and stir to combine. Bring to a boil, reduce the heat, and simmer for about 30 minutes. Season, to taste, with salt and black pepper. Stir in the cilantro, ladle into warm soup bowls, and serve with crusty bread.

    Outside of the prep work which took a little time, tasty and easy. Since we have horrible tomatoes in the Pacific Northwest in February, I bought San Marzano canned ones which have great flavor. Used two well drained cans of those plus a can of crushed tomatoes. Also used chicken sausage to cut down the fat. I also browned the bacon until it was crisp which gave the soup a nicer texture and color. Didn't have cilantro so used fresh basil which worked just as well. At the end my husband wanted grated cheese on top of his, I opted for very unItalian scoop of greek style yogurt which made the soup a bit more creamy.

    I have made this soup about 3 times now and it comes out perfect every time. I love it and everyone I make it for loves it. Like others, I use cans of tomatoes instead of fresh tomatoes. I also add small noodles and parmesan cheese served with garlic bread. A wonderful, tasty recipe with so much depth of flavor. You can't go wrong with this reipe.

    This is a great and easy recipe. I did not have a red onion so used a large yellow one. I also used 2 large cans of diced tomato and 1 crushed tomato with basil. It was wonderful and my husband gave 2 thumbs up!
