Dear Emeril: Thanks to you I now marinate my fish in buttermilk and coat them with cornmeal seasoned with your essence. For this technique I give your recipe three stars. That being said, I want to let you know that I often find your recipes confusing because they are not written clearly. For instance, in this recipe you instruct the cook to marinate the catfish in the "seasoned" buttermilk. However, you never explain what the cook is to season the buttermilk with! I am not a professional editor, but I am confident I could communicate your recipes in writting far more clearly than how they appear on the Food Network site. Let me know if you would like my help.

2 stars for the fish, but the slaw and hushpuppies were pretty poor. Lots of leftovers. Grew up on the Mississippi Gulf Coast, and as another reviewer put it, "Ain't like my mama used to make." Slaw had potential, but was missing something. Hush puppies were VERY dense! Oh well. Guess I'll have to wait till I go home to Mississippi to get the real thing.

I used this recipe last night and really enjoyed the meal.
The hushpuppie recipe was made ahead of time (about an hour and I put the milk, egg, onion, etc. into the fridge. When I added the dry mixture it was still cold and I think that it made the mixture hold better when I slipped it into the hot oil. It really puffs up and man O man! What a treat!

I made this recipe with walleye, I must tell you the buttermilk really changed the taste for the better! I am not a big fish eater, but after trying your recipe, I will be now. Also my husbands co-workers loved it! And the Hush Puppies are to die for. THANK YOU!

I love fried fish but never had much luck getting the coating to stick to the fish. Soaking the fish in buttermilk was something I had never tried. It was absolutely the best trick. The fish had a wonderful flavor and the coating stuck like a charm. It's the only way I'll ever fry fish again.

Good! We all love it. The coleslaw is the best....thanks
