    I prepared this recipe again, probably my 7th or 8th time, and once again it was exactly what I was looking for. This time I prepared it with smoked sausage and chicken (my son doesn't like any kind of fish or seafood and it was still very good. Personally, I prefer it with shrimp...and that is the best part about this recipe, you can prepare it according to your taste. May you rest in peace, Jake.

    Actually this was my brother Jake's recipe. Jake wrote the original Emeril Live theme music when Emeril first started Emeril Live. Jake always used chicken, sausage and varied between crawfish and shrimp depending on the time of year. The show was a memorial by Emeril to my brother on the one year anniversay of Jake's passing. I'm a little biased in favor of this recipe. Like anything else, it can be modified to fit your own personal tastes. But, it's a good base recipe to start with. Thanks, Emeril.

    This was a really good recipe. I substituted chicken for the crawfish as thats what I had available and thats the true spirit of jambalaya - whatever you have goes in the pot. It will definitely be my standard "base" jambalaya recipe moving forward.

    I've done this twice. It comes out fine, but you need the strong flavor of shrimp or crawfish,. Don't try this with delicate seafood such as lobster or crab. It's a great recipe to start with - add whatever, and change the sausage and seafood around.

    This is a great overall recipe!! As it's not that easy to get good crawfish where I live, I subsitute 1 lb of turkey sausage and also I put in chopped cooked chicken (usually from a rotisserie chicken you can pick up at the grocery store for the crawfish tails. I've taken this to many potluck type events and everyone always asks for the recipe!

    This is a jambalaya that has many levels of flavor, rather than just cajun seasoning, you have chicken stock, onion and garlic. Since I love onion and garlic, the portions are perfect, I don't find them overpowering at all. I always use shrimp rather than crawfish. I've also used a many different kinds of sausage for this dish and found that a spicy chicken sausage makes it a delicious healthy meal.

    The recipe is very strong on the onion and garlic. The crawfish are almost drowned out and the rice comes out gummy. I will not be adding this to my menu rotation.

    I made the recipe but with lobster and crab meat instead of the crawfish. (My grocery store was out. Then I threw the whole pot away, because all I could taste was onions and garlic.
