    I used two strips of chopped bacon to cook the onion, instead of butter. I doubled the pinch of cayenne pepper, and didn't have fresh jalapeno, so used the same amount of marinated jalapeno from a jar. I kept the salt the same, but used crumbled herbed feta cheese and tiny cubes of cheddar to make the 1/3 cup--and maybe ended up with a little more feta than cheddar. Just because I prefer wheat flour, I substituted that for the all purpose white flour. Baking time was 18 minutes. Came out great!

    These muffins taste fine but I don't think they were worth the effort. For having so many flavors going in, I was surprised how bland they were.

    This could be my very own creation, but being from Alabama I do not like sugar, honey, etc in any foods except desserts and turnip tops. Try it without any sweetness. YUM!!!

    Good hearty muffin. Enjoyed the texture added by the peppers and corn. I used frozen corn, because fresh wasn't available. I also thought the muffins needed more salt. (something was just missing Maybe my hearty pinch isn't the same size as Emeril's.

    Found these muffins to be dry and flavorless. Next time, I will remove the honey and replace with 1/4 cup brown sugar, reduce the cormeal by half and up the all purpose flour proportionally. Add 1 teaspoon of baking soda for that extra chemical rise thing before puting in the oven.

    My whole family thought this recipe was really tasty. Mine needed a bit more salt than the recipe called for and peppers. We like things spicy. I also tried it with parmesan cheese and regular milk and it came out fine.

    i enjoyed making these, they aren't the easiest corn muffins, but they're delicious. Not too spicy. I added some extra cheese on top of the muffins before i baked them, i like how it turned out. overall very good muffins, i served them with chili.
