AWESOME!!! it's got kick though so look out. we ended up using a different pasta; just as good. kinda might try it with rice next time. SUPER YUM!!!

I made this dish for my boyfriend who LOVES jambalaya and it was incredible!!! He loved it, and then me for making it ;
I read the reviews prior to making it and took the advice to use red bell peppers instead of green. It gave it a sweeter taste that was yum yum. I think next time I will also use some sun-dried tomatoes. Definitely a dish I will make many times!!!
Even my 14 year old loved it!

I've made this recipe several times all with good results except for one thing. Don't double the recipe. If you need to make more make it in separate batches. I doubled the recipe exactly and then mixed everything in a large pot at the end to accomodate the extra ingredients. To me something about it didn't taste right. The doubled volume seemed to make it more difficult to mix it without tearing up the penne and generally making a mess of things. When I make it in single batches it comes out perfect every time. The flavors are fantastic and the seasoning is well balanced. The amount of basil and thyme are perfect IMO and fresh is definately better. Dried herbs will certainly do in a pinch but I recommend using fresh if at all possible. I've read posts here from folks that added or omitted ingredients but IMO that does not add to or inhance the dish. I think this is one of those recipes that you'll be rewarded best if you prepare it exactly according to the recipe. Chow.

Even though I lightened this up a bit, it still tasted like 5 stars. It is so flavorful. I used half and half instead of full cream and used half as much parmesan cheese (I might even go down as far as 1% milk thickened with cornstarch if I wanted to be crazy about it. I replaced about 1/4 lb of the sausage with more shrimp (and probably added a little extra Essence though I didn't measure. I also added more of the onion, pepper and tomatoes than the recipe called for (I used fresh diced tomatoes. I might make it again this week because it was so good. Oh and the picture does not do it justice, it is so much more colorful than that.

Very flavorful! Used red pepper instead of green and did not include tomatoes (due to preferences. Think that it will be even better as a leftover! Will make again and again.

This has excellent flavors. The only changes I made were red pepper instead of green - I know, green is part of the trinity - and I had leftover tomato sauce instead of canned tomatoes, so sauce ended up nice and thick. Great spicy dinner for a cold winter's night.
