This is the best Kangaroo recipe ever!! If you are unable to get Kangaroo meat, you can substitute Coyote and it is just as good. Thanks Emeril for showing the U.S. that there are more animals to eat than Cows, pigs, and chicken. Maybe an all game show in the future?

I used this with chopped chicken and made the appropriate adjustments and served with the split pea soup. These were great! I swapped Fontina Cheese in instead as I thought it would go well with the chicken, and it did.
